Chili Pie!!


Tasty Tuesday is back. Today's recipe is Chili Pie, sort of. I found a recipe for Chili Pie in an issue of All You magazine. I made a different version of it, but it turned out great. Here is what you do:

Ingredients:
1 tbsp. of olive oil
1 small onion chopped
3 cloves of garlic chopped
1 lb. of ground beef
1 tsp. of chili powder
2 large garden tomatoes
1/2 tsp. of salt
1 can of corn
1 box of corn bread mix
1 large egg
1/3 cup of milk
1 cup of grated cheese

Preheat the oven to 400.

Place the olive oil in a skillet on medium heat, add onions and garlic. Cook until tender, around three minutes. Add the ground beef and cook until the beef is no longer pink.

Dice the tomatoes.

Add the chili powder, tomatoes, corn, salt, and 1/4 cup of water. Stir well and cook until almost all of the liquid has evaporated.



Mix the Corn bread mix, egg, milk, and cheese together.



Place the chili in a glass dish. Place the batter on top of the chili. Cook for 15 to 20 minutes.



There you have it, Chili Pie.

Looks great! I make a dip similar to the chili only without the garlic and chili powder and add Lipton onion soup mix. I serve it with warm Velveeta.. yum!

Might have to try the chili pie idea too!
