Tasty Tuesday!!

Sausage Muffins!!

These are so good, and you can freeze them. The recipe came from Robbyn's Friendly Freezer.

8 oz. sausage, cooked and crumbled
1 cup of flour
1 cup of yellow cornmeal
1/2 cup of Parmesan Cheese grated
1/4 cup of sugar
4 tsp. of baking powder
2 large eggs (beaten)
1 cup of Milk
1/4 cup of oil

Preheat oven to 400.

Stir together flour, cornmeal, sugar, baking powder, and 3/4 tsp. of salt. Combine eggs, milk, and oil. Add the liquid mixture to the dry mixture and stir until moist and lumpy. Fold in the sausage.

Fill greased muffin cups 2/3 full and bake for 20-25 min. (I found that I only needed to bake mine for about 17 minutes).
